Swedish Chocolate Balls

These no bake Swedish Chocolate Balls are incredibly easy to make and always a hit!

Ingredients
  

  • 1 Cup (2 sticks) unsalted butter at room temperature
  • 2 Cups rolled oats plus more for rolling
  • ½ Cup granulated sugar
  • 3 Tablespoons unsweetened cocoa powder
  • 3 Tablespoons prepared strong coffee
  • 1 ¼ Teaspoons vanilla extract
  • Unsweetened coconut shreds for rolling

Instructions
 

  • Mix all of the ingredients for the chocolate balls together until well incorporated. Taste and adjust; adding more cocoa, sugar, or coffee to your liking.
  • Roll the mixture into about 25 small balls. Roll the chocolate balls in the coconut, oats, or both.
  • Place the chocolate balls on a parchment lined baking sheet and chill them in the refrigerator for 2 hours before serving.
  • Enjoy!
