Swedish Chocolate Balls
These no bake Swedish Chocolate Balls are incredibly easy to make and always a hit!

- 1 Cup (2 sticks) unsalted butter at room temperature
- 2 Cups rolled oats plus more for rolling
- ½ Cup granulated sugar
- 3 Tablespoons unsweetened cocoa powder
- 3 Tablespoons prepared strong coffee
- 1 ¼ Teaspoons vanilla extract
- Unsweetened coconut shreds for rolling
Mix all of the ingredients for the chocolate balls together until well incorporated. Taste and adjust; adding more cocoa, sugar, or coffee to your liking.
Roll the mixture into about 25 small balls. Roll the chocolate balls in the coconut, oats, or both.
Place the chocolate balls on a parchment lined baking sheet and chill them in the refrigerator for 2 hours before serving.
